Macarons Recipe:

Servings - 5 macarons

This macaron recipe is perfect for those who love berry variations. In this version, we will use pomegranate for the layer, but feel free to choose any other berry from our selection.

Ingredients:

175 g of almond flour
135 g of powdered sugar
110 g of egg white
2 g of albumin
150 g of sugar
35 g of water
Pinch of salt and citric acid
2 g of freeze-dried pomegranate powder

Ganache: - 210 g of cream - 150 g of white chocolate - 10 g of freeze-dried pomegranate powder

Start by preparing the pomegranate ganache and cooling it in the fridge for 6 hours. Then, make the macaronage and adjust the intensity of the color to your liking. Shape the macarons into halves and bake them in the oven. Once cooled, stick them together with the pomegranate ganache.
